Monday Morning Coffee Chat

It’s Monday. I’m Happy. I’m Blessed.
God is going to do amazing things this week,
of course
He does amazing things every week!!

Today I'm Wishing You . . .
An easy start on Monday.
No obstacle for Tuesday.
Less stress on Wednesday.
Unexpected blessings on Thursday.
A delightful Friday.
Lots of laughter and hugs on Saturday.
And a restful and peaceful Sunday.

Sylvia from A Grandma's Blessings shared this recipe with me, it was on facebook . . there's always something to share on facebook.  I haven't made it YET!  Thank you Sylvia

Cold Brew Coffee Pie

Prep time:

Serves: 8
This frozen, no-bake Cold Brew Coffee Pie is PHENOMENAL. Creamy, smooth and packed with coffee flavor, it's perfect for a hot day and for any coffee fanatic!

1 3.4 oz box instant vanilla pudding mix
¾ cup cold brew coffee (sweetened or unsweetened will work)
½ cup milk or cream
1 Tbsp pure coffee extract (or less if you want a less strong coffee flavor)
1 8 oz tub Cool Whip, thawed
1 prepared Oreo cookie crust
Whipped cream, for garnish
Dark chocolate-covered espresso beans, for garnish

In a large bowl, whisk together the instant pudding dry mix, the cold brew coffee, the milk and the coffee extract. Whisk until combined and slightly thickened, about 1 minute. Fold in the Cool Whip completely, making sure to get the bottom!
Pour the mixture into the prepared pie crust and smooth out the top. Freeze for at least 6 hours, or overnight.
Just before serving, pipe on whipped cream and garnish with dark chocolate-covered espresso beans. Cut into wedges and serve!

Monday's Manna

For every 'No' that the Lord says to you , He is saying 'Yes' to something else, and to something better! For every door He allows to be shut, He has already opened another one, and a better one! There is another side to every no!

Have a lovely new week!

Until Next Time

  1. Wow! So much wonderful goodness packed into this post today! Loved the thoughts for each day...and that pie Sylvia shared does look good, even if I don't like coffee! Gregory Fleck's quote about doors shutting and opening is a great one...I need to attach that to my blog, "Closed Doors, Open Windows". I hope your Monday is superbly blessed...and that it carries over to every day of the week!!

  2. Oh my..that sounds right up my alley!! I love anything with a coffee flavor. Marvin and I enjoy the Jamocha shakes at Arbys as well. This sounds like a frozen version.

  3. That's It Mary!! I'm copying the recipe and will make it to have with my coffee. LOL! I so enjoyed your Monday Morning Coffee Chat. Have a day of blessings my friend.

  4. This was a delightful post.
The recipe sounds wonderful but I have to watch sugar so, sigh.. sigh. It sounds wonderful.
I wish you a good Monday and a blessed week

  5. Toni and Mary, please let me know if and when you make it, how you like it. I can't eat it either since I am on a sugar free, low carb diet. I would love to make it when I lose all this weight that is weighting me down.
Mary, I love your Monday morning chat's!

  6. Oh wait a mean to tell me, there is a Coffee Extract????? Smiles---thanks for sharing Mary and I will have to give it a try.

  7. Like Arlene, I love anything with coffee flavor! Blessings to you.

  8. That pie looks and sounds SO good!! I need to look for some coffee extract! Never heard of it before this! Your posts always - always - lift me up!!

  9. Oooooh, the pie looks so good and bet it tastes that good too! I also liked your 'wishes' for the week. I had never heard of coffee extract either....:-)

  10. The Cold brew coffee pie looks so delicious but I think I better not make it. Too tempting and I'm really thinking I need to lose a few pounds. As I get older my weight slowly but surely shifts down to my tummy!
    Have a good week!!

  11. I think I will try that pie even though I am not a coffee lover, my husband is.

  12. Yummy looking pie....and right up your alley! ;-) Sorry I've missed your posts this week....this eye injury is driving me somewhat nuts! Okay, more than normal...LOL
