Sweet Talk

Sweet words are so nice to say and to hear.  I think it's a double blessing!

Talk about sweet....
....these sweet little girls had a great time at Disney on Ice!

Sweet Potato Pie
Looks like pumpkin pie!

1 pound of sweet potatoes
1/2 cup butter, softened
1 cup white sugar
1/2 cup milk

Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.

Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.

Bake at 350 degrees for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.

Luby's had this pie on their menu during the winter, it sure was good!!

  4. Those little girls are beautiful and look like they are having fun. That pie looks and sounds good. Now I don't know what to do. I was going to bake a chess pie today, but that looks really good.

  7. Oh, SO SWEET!! I love this post. It just oozes with sweetness! Love your little girls...they are adorable...and SO sweet!! Sweet Potato pie...Okay..I love sweet potatoes, and usually make sweet potato casserole every Thanksgiving...and it is super sweet. I like my hot tea sweet, but my iced tea unsweet! And who could forget Popeye's Sweet Pea! So cute! Thank you for making me feel sweet all over!!

  8. I imagine Sweet potato pie would taste much like pumpkin pie. Which I want to make one of these days because I normally make it only in Autumn but why not now?
    Those two sweet little girl faces full of joy make me smile right back at them.
