Morning Morning Coffee Chat

WoW, what a great holiday this has been.


It has been a wonderful few days and this lady is pooped.  It takes a lot of air to talk and laugh and eat and play games, even when the game was just sitting at the table rolling dice.  We played a game called TENZI...each player has 10 dice of the same color, the object is to roll all ten and get the same number.  When you do that you yell out TENZI!  Easy enough that Ava got to play too! πŸ˜€πŸ˜€πŸ˜€



It was a very active Thanksgiving, we rested on Friday and I went to GLOW on Saturday.  Another 3 hours of talking and laughing and eating!.

I don't think I rested enough on Friday.

When I got home Saturday afternoon my oxygen level was 77, that is just too low.  My mobile tank just doesn't always do the job, I got on my base unit and it didn't take long for the level to come up.  When it drops that low it makes me very tired and it's not good for my heart.

Needless to say, I'll be staying home for a few days getting lots of rest.  But that's okay, I just started a new cross stitch and a new book.  

God's still on His Throne and everything is going to be okay.

I don't remember ever doing any Christmas decorations before December 1st...well, as you can see, that's changed.  I've done just a couple of things, I guess I better wait until late next week to do it all.  I have been ready for Christmas for over a month, I'm so glad it's HERE!! (well almost)

My grandchildren call me 'Granny' ~ I was scrolling on facebook this morning when I saw a recipe for a Granny Cake!  Oh yes, I'm going to make this one. 

Granny Cake Ingredients:

1 1/2 cups sugar
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1 (20 oz.) can crushed pineapples, with juice
1 cup brown sugar
1 cup pecans, chopped

Icing:
1 cup evaporated milk
1/2 cup sugar
1/2 cup (1 stick) unsalted butter
1 teaspoon 

Preparation:

  • Preheat oven to 350ΒΊ F and lightly grease a 9x13-inch baking dish with butter or non-stick spray.
    In a large bowl, whisk together sugar, flour, baking soda and salt, then mix in eggs and pineapple.
    Pour batter into your pan and top with an even layer of pecans and brown sugar.
Place baking dish in oven and bake for 40-45 minutes, or until toothpick inserted in center comes out clean.

While cake cooks, combine evaporated milk, sugar and butter in a medium saucepan over medium-high heat and bring to a boil.  Remove from heart and stir in vanilla extract, then pour over hot cake.

Let cake cool so it absorbs icing, then slice, serve and enjoy.
I'll let you know if it's as good as it sounds and looks!

  1. Great post, Mary. I sure hope you are feeling better today. l have a problem with doing too much at one time, I am praying about it and trying to do better, (I'm not getting any younger} That Granny Cake sure looks good! Thanks for the recipe.

  2. Oh I so enjoyed your post Miss Mary. I do hope that you are feeling much better. Girl, I left my asthma meds at home while in Ga over the weekend and needless to say....I struggled a bit. Praise the Lord for watching over me. I love the story of the cardinal. I also have always heard that when you see a red bird that someone you have loved and lost is very near. I love that!   6. My grands call me Granny too. I can remember how thrilled I was when the first two ( who were born just a month apart) started talking and could say some version of 'granny'. Now those 2 are 30 yrs old! Where does time go?

    I'm glad you're taking it easy and recuperating from Thanksgiving.
    The cake sounds ( and looks) yummy.

  8. I'm so glad you had such a great weekend, but not happy at all about your oxygen levels and being so tired. I wish I could come help you finish decorating. Not sure how much "work" we'd get done, though, if we ever got a chance to actually be together...in person!!! Take care of yourself, my precious Friend. This Granny (Nannie) has gotta make that cake. It looks sooooo moist and ooey gooey and yummy and lots and lots of calories...just my kind of dessert! LOL You know I LOVE that foto of the cardinals...and what a precious story. I had never heard that. Love you, my Friend. Again...TAKE CARE of YOU!
